I am committed to assisting restaurant professionals in elevating their hospitality through correct service methods, guest engagement, product expertise, collaboration, and established sales strategies. With over 27 years of experience in the industry, my background includes almost ten years at AAA Five and Four Diamond Rated resorts and restaurants. My career has led me to work with a Michelin-starred chef, three James Beard Award winners with multiple nominations, an OpenTable Top 100 in the nation, and the restaurant named the 24th Best in the World by Restaurant Magazine in 2003. I am also a Level One Sommelier through the Court of Master Sommeliers and a certified business consultant. I have participated in numerous corporate training workshops and have effectively trained hundreds of service team members.
WHAT WE OFFER
I offer extensive service development courses that can be conducted onsite for restaurant teams or at the Mona Lisa Wine Cellar for daily sessions. Hourly courses covering a range of subjects are also available. For optimal learning, I advise enrolling in the three- and five-hour courses consecutively, with a special rate of $249 when completed on the same day or within the same week. Restaurants that register four or more participants will benefit from a discount. Additionally, courses can be retaken at half the price until December 19th.

Interactive Development Courses at Mona Lisa Wine Cellar
$75 One-hour individual sessions on any topic of your choosing. One on one training for a number of different subjects, such as
Hospitality, proper service techniques, table maintenance, wine service and sales, building guest rapport, finer points of service, sales tactics, and how to perform in an interview.
$99 three-hour course is ideal for individuals in the early stages of their serving career or those aspiring to enter the field. It offers significant benefits for servers aiming to enhance their fundamental skills and gain a solid understanding of the essentials for success in serving. The course focuses on correct food and beverage service methods, with strong emphasis on presentation, clearance, and table management. Mastery of these skills, combined with expanded product knowledge, will boost your confidence and efficiency as you progress in your career.
$199 five-hour course is designed for servers with several years of experience who aspire to refine their skills and become top-tier hospitality professionals. This course is the core of our program. Participants will delve into advanced topics such as managing your section, refined service techniques, commanding table presence, sophisticated wine service, the nuances of exceptional service, establishing guest rapport, navigating guests through the menu, leveraging menus as tools, anticipating guest needs, and effective sales strategies.
Three-Day Onsite Restaurant Development Program
I will lead a three-day program at your restaurant, which will encompass fifteen hours of presentations, interactive workshops, and live service observations with feedback. Additionally, I will develop a customized packet to foster continuous hospitality, product knowledge, proper service techniques, and sales strategies.
Due to the distinctive characteristics of each restaurant, pricing will be established on an individual basis.
